    How do I monitor udp ports and how do I implement service checks? Something like dns requests and ldap requests and not just scanning the port.

    You need to write a plugin. It’s very very easy. Just take the sample of UDP port scan or the sample of SSH exec and try to do with DIG or nslookup.

    Write here if you need help, try to explain possible uses and I’ll help you to build one.
